The Night Before Christmas

Merry Christmas Eve! This month has gone incredibly fast and I can't believe it's Christmas tomorrow. I absolutely love Christmas Eve it's a time to cosy up watch all of those classic Christmas films, drink endless hot chocolates while wrapping presents. The night before Christmas means hot chocolates, films, face masks and burning all of those festive candles. I love having a mini pamper session in front of the heated fire and that's exactly what I have planned for tonight. I didn't have a post planned for today so I thought I would use this time to wish you all a Merry Christmas and to say Thank you for all the love towards my blog this year, I can't wait to see what next year brings. Christmas Sugar Cookies


 One of my favourite Christmas time treats are Sugared Cookies, soft in the centre and crisp on the edges, these are perfect for a cold winters night with a cup of tea. Christmas is all about those festive bakes and I really enjoy making these every single year. I love baking around this time of the year, not only does it give that ultimate comfort feeling but it truly get's you in the Christmassy mood! 
  • Ingredients:
  • 375g Flour
  • 140g Icing Sugar
  • 1tsp Vanilla Extract
  • 1 Egg Yolk
  • 250g Butter
  • Sugar Icing Pens
Firstly start by preheating the oven to 190C and lining two baking sheets with non stick baking paper. Next up is mixing the icing sugar, vanilla extract, egg yolk and butter into a mixing bowl and stir together with a wooden spoon. Next add the flour and mix into a firm dough, wrap the dough in cling film and chill in the fridge for around 20-30mins. Lightly dust your surface with some flour and roll out the dough with a rolling pin. Cut out your cookies with your chosen Christmas cutters and carefully place them on the baking paper. Pop the cookies into the over for around 10-12minutes until they're lightly golden. Once your cookies are out of the over carefully lift them on a cooling rack and leave to fully cool down before icing them up. I choose to use sugar icing pens as I find them a lot easier to work with and you can honestly purchase them in most supermarkets.     Festive Reindeer Chocolate Bark

    Chocolate bark is one of my all time favourite Christmas treats, it's super easy and fun to make for a girly night in or a fun little activity you can do with the family. Christmas is all about those yummy treats and this recipe is super easy and very fast to make, simply melt some chocolate and your good to go. I've seen a few people make these over on Instagram and really wanted to give them a go and share with you all how mine turned out. I really want to have a go at making Snowmen Chocolate Bark so I think that shall be a fun activity to do on Christmas Eve with all of the family.      Ingredients: 
    Three bars of Cadbury's Dairy Milk Chocolate (or any chocolate of your choice)
    - Two Candy Canes 
    - Pretzels 
    - Red M&M's 
    - Edible Icing Eyes

    Firstly place some grease proof paper on a flat tray and start to prepare your ingredients, cutting the pretzels does take some time so it's important to do so before melting the chocolate. The easiest way to break the pretzels in half is by slowly cutting them with a sharp knife directly down the middle. Next up is melting the chocolate, I simply boiled some water in a saucepan and placed a glass bowl on top, you can of course microwave the chocolate but I always seem to burn it that way. Once the chocolate is melted pour and spread it out onto the grease proof paper, I went for a rectangle shape but of course you can do any shape you wish to. It's important to work quickly in the next steps as the chocolate can harder quite quickly. I simply then placed two halves of the pretzels onto the melted chocolate and then added some eyes and a red M&M for the nose, lastly I sprinkled some crushed candy cane all over and placed it the fridge until set, once it's set you can break it into pieces and enjoy! This recipe is super easy and lot's of fun to make.

    A Festive Gingerbread Hot Chocolate

    It's the season for hot chocolates and I absolutely love experimenting with new flavours, Gingerbread hot chocolate is amazing so if you're a lover of gingerbread men then you definitely need to try this out. There are so many festive drinks but here's my all time favourite one so I thought I would share the recipe with you all. Craving a hot chocolate on a cold winter's evening, then be sure to give this a go and let me know in the comments below your favourite festive drink to make. This recipe serves up to four hot chocolates.

    Ingredients:
    - 4 cups of milk
    - 1/2 cup of Cocoa Powder
    - 1/4 cup brown sugar
    - 1/4 white sugar
    - 1/2 teaspoon ground cinnamon
    - 1/2 teaspoon allspice 
    - 1/2 teaspoon ground ginger
    - 1/2 teaspoon vanilla extract
    - Whipped cream for topping 

    In a medium saucepan start to heat up the milk, then add in the cocoa powder, brown sugar, cinnamon, allspice, ginger and vanilla extract and whisk until hot. Once it's hot enough simply pour the hot chocolate into your favourite mug and top it off with some whipped cream and a little gingerbread man. I also like to sprinkle some cinnamon on top as I'm obsessed. This recipe is super easy and tastes absolutely amazing!!     The Sherwood Hideaway

    I recently took a trip to The Sherwood Hideaway in Thoresby for a four day break, it was such a lovely little getaway and I really didn't want to leave. If you're looking for a relaxing getaway in the middle of the forest this is the place to go, everything's so calm and you will honestly never want to leave. The Sherwood Hideaway is a woodland retreat of high quality luxury lodges which are nestled deep within Sherwood Forest on the lovely Thoresby Estate. The Sherwood Hideaway offer different types of cabins to choose from such as the Woodland Rustic, Woodland View, Woodland Escape, Traditional VIP,  Dog friendly cabins and the brand new 2016 lodges. This was our first time visiting The Sherwood Hideaway and we instantly knew it wouldn't be our last. We stayed in a Woodland Rustic Lodge which sleeps 4 people. The Woodland Rustic Lodges are complete with a lovely Opti-myst fire and a hot tub, the ultimate must haves for a forest get away. Our cabin slept four people so it was very spacious, it was super clean, comfortable and it literally had everything we needed from towels, robes and even those comfy slippers which I love. The lovely people at Sherwood Hideaway also gave us a complimentary bottle of wine and chocolates on arrival, which is so thoughtful.
    The staff at The Sherwood Hideaway were so friendly and helpful, when we first arrived check-in was a breeze, they gave us hand outs and a map of The Sherwood Hideaway which showed you various walks you could go on. They also gave us a few takeaway places that actually deliver straight to your cabin, this was super handy when we hand been exploring all day and just wanted some quick delicious food. Our Woodland Lodge was spotless and I honestly couldn't fault it one bit. The Woodland Rustic Lodge interior is amazing, I love every little detail they have put into designing this place. The minute we walked into our lodge I felt warm and cosy, it's such a lovely place that you instantly feel at home. Our lodge was lovely, it was super clean, spacious and everything was finished to an extremely high standard. The main living area had two super comfy sofa's and a lovely coffee table, a flat screen tv which is attached to the wall and of course the amazing Opti-Myst heated fire which I'm slightly obsessed with. The dinning area and kitchen were off of the main living area, the kitchen was spacious and well equipped with a dishwasher, cutlery and everything you could possibly need to self cater in comfort along with a lovely little dinning area to enjoy family meals at. In our Woodland Rusitc that sleeps 4 people we had a main bedroom with a double bed and it's very own en-suite shower. There was also another separate bathroom with a bath, both bathrooms were very modern and both had heated towel racks, which comes in very handy. The Sherwood Hideaway also give you complimentary mini Molton Brown products in both bathrooms, I absoutely love Molton Brown and was super excited when I saw these. The beds were super comfy and the rooms were very spacious, each room had it's very own wardrobe so you can neatly hang up your clothes. I was super impressed with the small touches in the lodge and I think they have decorated each room beautifully to a very high standard, the furniture was of very high quality and each room had it's own special touches to make it feel very welcoming and cosy. 
    One of my favourite things at The Sherwood Hideaway was the Opti-Myst fire, this made our evenings super cosy and we would cuddle up watching a film with the heated fire on. Opti-Myst fires are very realistic and have a smoke effect, they give an illusion so effective that you believe it is a real flame. I now really want one of these in my house, they add such a lovely touch to the sitting room for that ultimate cosy feeling, they're also heated so if you're feeling extra chilly that night grab a hot chocolate and get comfy in front of the fire. Our whole cabin had under floor heating which we took full advantage of. Underfloor heating is such a lovely thing to have in a lodge, it warms up the whole place super fast and my feet were always nice and toasty.  
    The decking area outside was very luxurious and spacious, there was a hot tub along with a lovely set of out door table and chairs. They also supply you with a bbq which we definitely took full advantage of. I love roasting marshmallows and it's one of my all time favourite things to do around this time of the year. We took a trip to the local supermarket and picked up some wood to start a fire, who else loves that bonfire smell as much as I do?! I think we pretty much roasted marshmallows every single night and sat by the fire in the crisp cold air, it was the best feeling ever. I absoutely loved the whole experience while staying in our Woodland Rustic Lodge, hiding out in a lodge with nothing but trees and birds is so peaceful, from the moment we arrived we instantly felt super relaxed. Visiting in the Autumn time was perfect and I couldn't of asked for a better getaway.  
    The Sherwood Hideaway have many places to explore near by. Whether you're into relaxing spa days or long muddy forest walks, you'll find something you love doing. We went and visited the stunning Thoresby Hotel which has amazing grounds with beautiful views. There are a number of parks and forests to walk to and a lovely town nearby, while exploring we discovered some divine restaurants which are around a 7 minute drive from The Sherwood Hideaway site. The Sherwood Hideaway is the perfect holiday for romantic escapes, family holidays, active getaways and restful breaks, it was a great time for me to unwind and take time away from the internet, of course I had to instagram my experience but I mean one photo a day was acceptable. There's something rather relaxing and special watching the stars in the hot tub with your other half after a long day of exploring the woods and local area, this is truly my idea of a perfect night! The Sherwood Hideaway are also dog friendly and have a selection of lodges that cater for those travelling with pets. The Sherwood Forest also has some amazing trails that go on and on so you can explore for as long as you like. 
    Our overall experience at The Sherwood Hideaway was amazing and I can't fault this place one bit. The staff are so friendly and welcoming and the lodges are very luxurious and cosy. It's super important to spend time with your family, friends or other half, everyday life can get in the way sometimes and you truly do miss out on these quality priceless times with loved ones. The Sherwood Hideaway is the ideal location to get away with the ones you love and treat yourself to a little break in a peaceful environment. I truly did not want to leave and I'm already longing to go back, which I hope happens sooner rather than later.     An Autumn Bake

    One of my favourite Autumn time treats are Gingerbread Men, soft in the centres and crisp on the edges. Gingerbread Men are the perfect Autumn bake and super fun and easy to make especially with Christmas approaching you can't go wrong with these perfectly spiced sugary holiday goodness. I love baking around this time of the year, not only does it give that ultimate comfort feeling, these will also leave your whole house smelling divine! I'm currently on the hunt to find a candle that smells exactly like freshly baked Gingerbread Men! I really hope you enjoy this style post and be sure to let me know in the comments below a few of your favourite Autumn treats to bake?!
    Ingredients:
    • 350g plain flour, plus extra for rolling out
    • 1 tsp bicarbonate of soda
    • 2 tsp ground ginger
    • 1 tsp ground cinnamon
    • 125g butter
    • 175g light soft brown sugar
    • 1 free-range egg
    • 4 tbsp golden syrup
    • Method:
    • 1. Sift together the flour, bicarbonate of soda, ginger and cinnamon and pour into the bowl of a food processor. Add the butter and blend until the mix looks like breadcrumbs. Then stir in the sugar. 
    • 2. Next is to lightly beat the egg and golden syrup together, add to the food processor until the mixture clumps together. Tip the dough out, knead briefly until smooth, wrap in clingfim and leave to chill in the fridge for 15 minutes.
    • 3. Preheat the oven to 180C/350F/Gas and line two baking trays with greaseproof paper. 
    • 4. Roll the dough out to a 0.5cm/¼in thickness on a lightly floured surface. Using cutters, cut out the gingerbread men shapes and place on the baking tray, leaving a gap between them. 
    • 5. Bake for 12-15 minutes, or until lightly golden-brown. Leave on the tray for 10 minutes and then move to a wire rack to finish cooling. When cooled decorate with the writing icing and cake decorations.I simply decorated my gingerbread men with a pipping bag of icing, this is rather tricky but I guess they come out ok in the end, some I left plain just to dip in some tea which also worked out perfectly. I was rather impressed with the outcome of these and they tasted absolutely amazing. Gingerbread Men are the perfect Autumn treat to have on a chilly day!
