An Autumn Bake

One of my favourite Autumn time treats are Gingerbread Men, soft in the centres and crisp on the edges. Gingerbread Men are the perfect Autumn bake and super fun and easy to make especially with Christmas approaching you can't go wrong with these perfectly spiced sugary holiday goodness. I love baking around this time of the year, not only does it give that ultimate comfort feeling, these will also leave your whole house smelling divine! I'm currently on the hunt to find a candle that smells exactly like freshly baked Gingerbread Men!   • 350g plain flour, plus extra for rolling out
  • 1 tsp bicarbonate of soda
  • 2 tsp ground ginger
  • 1 tsp ground cinnamon
  • 125g butter
  • 175g light soft brown sugar
  • 1 free-range egg
  • 4 tbsp golden syrup
  • Method:
  • 1. Sift together the flour, bicarbonate of soda, ginger and cinnamon and pour into the bowl of a food processor. Add the butter and blend until the mix looks like breadcrumbs. Then stir in the sugar. 
  • 2. Next is to lightly beat the egg and golden syrup together, add to the food processor until the mixture clumps together. Tip the dough out, knead briefly until smooth, wrap in clingfim and leave to chill in the fridge for 15 minutes.
  • 3. Preheat the oven to 180C/350F/Gas and line two baking trays with greaseproof paper. 
  • 4. Roll the dough out to a 0.5cm/¼in thickness on a lightly floured surface. Using cutters, cut out the gingerbread men shapes and place on the baking tray, leaving a gap between them. 
  • 5. Bake for 12-15 minutes, or until lightly golden-brown. Leave on the tray for 10 minutes and then move to a wire rack to finish cooling. When cooled decorate with the writing icing and cake decorations.I simply decorated my gingerbread men with a pipping bag of icing, this is rather tricky but I guess they come out ok in the end, some I left plain just to dip in some tea which also worked out perfectly. I was rather impressed with the outcome of these and they tasted absolutely amazing. Gingerbread Men are the perfect Autumn treat to have on a chilly day!

    I don't do any baking (shame on me), however I wouldn't turn away a home-made mince pie or a slice of Christmas cake. Yum.
